WHIPPING up a meal in your own kitchen is hard enough, but imagine doing it on a moving train winding its way through snowy mountains with no opportunity to stop at the local store for ingredients should you forget something.

Jean Pierre Guerin has been the Executive Chef of Canada's Rocky Mountaineer since 2008. A luxury train ride through British Columbia and the Canadian Rockies, his job is to manage a galley kitchen with limited space all while on a moving train.

Creating three-course a la carte meals for its guests is no easy feat. To date the kitchen has served up over one million eggs and 500,000 croissants and each season goes through 50,000 eggs and 45,000 pancakes.

So what does it take to be the head honcho of such an operation?

"It is a moving kitchen, so precision and organisation is key! We are a very close culinary team, and know how to work together very well. The view out of the windows is amazing, which is an added bonus," says Guerin.

Guerin is an award winning chef who has served notable names such as Bill Clinton, Meryl Streep and Lady Diana. He has designed the first class menus of airlines such as Lufthansa before joining the Rocky Mountaineer in 2008.

Offering trips from April through to October Guerin uses the off season to experiment with new dishes to ensure they have different menus for each route and day on the trip. All their ingredients must be taken with them from departure so organisation is key. Guerin also likes to use local producers.

"We have a number of suppliers locally who provide us with a gorgeous assortment of seasonal, local vegetables mostly from the Fraser Valley in BC. We are so fortunate to have a great network of farms in western Canada," he says.

Favourite dishes

"Our Aussie guests love the braised Alberta short rib with horseradish mashed potatoes, the wild mushroom crusted Fraser Valley chicken breast with blueberry relish, and of course our desserts- the dark chocolate pistachio brownie is a decadent hit, he says.

As for typical Canadian dishes you can expect to find the best of what the extreme climate can offer.

"Our barley risotto is an iconic Canadian dish, as we don't grow rice here — it's too cold in the winter, but our fields are full of barley when the fall harvest comes. We use delicious beef from Alberta and wild British Columbia salmon," he says.

Favourite stop on the tour

"The Rocky Mountains are breathtaking. I especially love Jasper, as it is a quaint mountain town full of incredible vistas, many forms of wildlife, and beautiful trees, especially the Aspens, with their amazing gold hued leaves. Each of our destinations is unique, it is very hard to pick just one favourite."

They also like to have a bit of fun on the road.

"We had the first ever conga line on the train one afternoon- you'll never guess which crazy Australian chef and TV personality started that. Hint: MM," he says.
